We’ll start with one of our absolute culinary highlights. Our wonderful cranberry schmarrn is the recipe most frequently requested by our guests. This comes as no surprise, as the classic version of this fluffy dessert is rightly one of the best-known and most beloved delicacies in Austrian cuisine. Just the sight of it is enough to make your mouth water, just as it did for the namesake of the traditional Schmarrn, Emperor Franz Joseph I. How wonderful that our Moosbeerschmarrn is ready in the blink of an eye.

What makes our Moosbeerschmarrn special

As our guests experience every day, even small ideas and carefully selected ingredients can significantly shape the taste experience. So we took the coveted Kaiserschmarrn as our base and refined it with the delicious, slightly sweet-and-sour flavor of cranberries. These transform the vegetarian dessert—which can certainly also serve as a sweet main course—into a true culinary moment of joy for young and old alike. 

But what exactly are moosberries? A question our guests who aren’t from the region ask time and again. Moosberries belong to the blueberry family. In certain regions of Austria, such as Salzburg or Tyrol, even conventional blueberries are referred to as moosberries. The berries are packed with vitamin C, minerals, pectin, and organic acids—a local superfood. They have a distinctive flavor similar to that of lingonberries, which is why they’re usually served with game. But not here! Here, we give them a sweet twist. 

With our recipe, your Moosbeerschmarrn will always turn out perfectly. Why not try it for yourself right away? We’re sure that, like so many of our Pfeffermühlen guests before you, you’ll be amazed to discover: “Not all Schmarrn is created equal!” 

Cranberry Schmarrn for 2 people

Ingredients:

  • 140 g all-purpose flour

  • 4 egg yolks

  • 250 ml milk

  • a pinch of salt 

  • a pinch of vanilla

  • some lemon zest 

  • a small splash of rum 

  • 4 egg whites

  • 40 g sugar

  • a handful of cranberries

Preparation:

First, mix the dry ingredients: all-purpose flour, salt, vanilla, and lemon zest. Whisk together the egg yolks, milk, and rum, then add the mixture to the dry ingredients. Beat the egg whites with sugar until stiff peaks form, then gently fold them into the first mixture. Beating the egg whites until stiff and gently folding them in makes the Schmarren heavenly fluffy! Coat a nonstick pan with neutral oil and heat over medium heat. Now pour the batter into the pan. When the Schmarren begins to set, scatter a handful of cranberries on top and let them sink in.Cook the bottom until light brown, then flip with a spatula and finish cooking. Remove the Schmarrn from the heat and tear it into small, fluffy pieces using two forks. Serve sprinkled with powdered sugar according to personal taste and enjoy.
